  • Quick & Easy Jambalaya

    1 Box jambalaya rice mix 4 T. extra virgin olive oil 1 Package (14 oz.) beef polka kielbasa, cut in ½” slices ½ Lb. frozen shrimp, thawed, shelled and deveined Directions: Prepare rice according to directions.

  • Spinach Lasagna

    1 cup cooked fresh spinach, drained 24 lasagna noodles 2 eggs 1 cup ricotta cheese 4 cups Marinara Sauce 2 cups mozzarella cheese ½ cup Parmesan cheese Directions: Squeeze the excess water out of the spinach by pressing with an absorbent paper towel. Set aside. Cook the lasagna according to the package directions.

  • Spicy Hot Beef Stew & Crusty Iron Skillet Cornbread

    Spicy Hot Beef Stew ¼ cup of extra virgin olive oil ½ sweet onion, chopped 1.5 lbs lean sirloin roast cut into chunks, dusted with flour 5 medium carrots cut into large pieces 4 medium red potatoes cut into quarters or smaller 2 cups beef broth 1 15 oz can tomato sauce 1 tsp. sea salt 1 tsp. crushed red pepper (add more for spicier stew) 1 cup red wine* Directions: In large skillet, sauté onion in olive oil on med-low temp.
